Here's the thing: Many people claim to be editors. Most of them even believe they are good editors (which led them to try it out as a career in the first place). The truth, unfortunately, is that very few of those who profess to be editors are very good at it. My clients tell me stories everyday about hiring multiple editors before finding one who could complete their project as described. I speak to writers who now expect to hire their work out for two or three, or even four rounds of revision, because they cannot find reliable editing services. I think that is a very sad thing!
So I am taking a gamble. I am gambling on my suspicion that there is still a market for writing and editing services of the very highest quality. My bids are almost never the lowest, but my customers find value in knowing their projects will be done right the first time.
